It's sometimes hard to get our children excited about vegetables. Broccoli? No! Asparagus? Absolutely not! But with this recipe — using bell peppers, ground beef, cauliflower rice, and (the winning ingredient!) cheese — your littles might even ask for seconds. And parents won't have to worry about any extra pesky carbs. It's a win-win!
Last weekend, a Memphis Parent staffer made these delicious — and simple — low-carb stuffed bell peppers and wanted to share the recipe.
Low-Carb Stuffed Bell Peppers
Ingredients
2 & 1/2 lbs. lean ground beef
2 tbsp. minced garlic
2 tsp. garlic salt
2 tsp. black pepper
Crushed red pepper to taste
3/4 cup white onion
1/2 cup soy sauce
2 cups cauliflower rice (we used a steamable bag)
6 large bell peppers (can use any color bell peppers you like; we used green)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Directions
Preheat oven to 350
Brown ground beef with minced garlic, garlic salt, black pepper, and crushed red pepper
Add in chopped white onion and soy sauce
While cooking, wash peppers, remove tops and seeds
Drain ground beef mixture and transfer to a large bowl
Combine beef mixture with both cheeses and steamed cauliflower rice
Fill bell peppers with mixture, place on baking sheet and pop in oven for 30-40 minutes
Serves 6
