With just a few, simple ingredients, these hearty burgers are a great source of fiber and protein! Made with quinoa and white beans, they are elevated with flavorful herbs and spices and topped with a limey avocado spread. Burgers
- 1/2 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1 15 oz. can white beans, drained and rinsed
- 2 garlic cloves
- 2/3 cup sun-dried tomatoes
- 1/2 cup packed fresh basil
- A pinch of Kosher salt
- A pinch of ground black pepper
- 2 TBSP of olive oil
- 6 hamburger buns
Avocado Spread
- 1 avocado
- 1 lime juiced
- A pinch of Kosher salt
- Choice of topping: red onion, lettuce, tomato
DIRECTIONS
Cook quinoa according to package directions.
Add ingredients for patties to food processor and blend until combined.
Carefully remove blade and set aside.
Use 1/3 measuring cup to scoop mixture into hands. Form patties.
Heat olive oil in large nonstick skillet over medium-high heat for 5 minutes, then reduce heat to medium. Cook patties in batches for 3 minutes per side.
In a small bowl, combine avocado, lime juice and salt. Mix with fork until smooth.
Serve burgers on bun with avocado spread and toppings of choice.
