Maybe it’s the post-holiday winter blues or just the simple lack of gumption, but my energy for complicated dinners with tons of kitchen time is gone.
My Instant Pot has become my best friend, especially the slow cooker function. With it, I can toss together some unfussy ingredients, turn it on, and have something good for dinner (without feeling like I’ve run a marathon once it’s on the table).
Here are some fool-proof, go-to dinners at my house for these cold winter nights.
Mississippi Roast
If you’ve never made this dish (pictured above), do it. It is incredibly tasty and incredibly easy. No, the amount of butter prescribed in the recipe won’t win awards for nutrition. So, I cut it. (Don’t tell our kids.)

Instant Pot Hamburger Soup
I have no idea why, but this recipe is a crowd-pleaser for our little ones. If the ingredients were deconstructed, they’d turn their little noses up at it. But, somehow, when it’s all together, it’s magic.
I substitute ground turkey for beef and add a bag of frozen vegetables at the end for some extra, hidden nutrition.

Instant Pot Spaghetti
Holy macaroni (or, well, spaghetti), this recipe is as easy as it comes. This is my ace in the sleeve when I have no idea what to cook and my brain just does not work anymore.
Brown the ground beef (again, I use turkey), dump in everything else, and watch a guilty-pleasure TV show until the things beeps at you. Serve. Smile.
